CJ FNT launches natural phosphate replacement

CJ FNT has brought to market a 100% vegan phosphate replacement as concerns about the potential health risks of consuming high levels of phosphate in processed meat products grow.

With food manufacturers are seeking alternative solutions, TasteNrich Natural Phosphate Replacement Solution enhances texture by improving water-holding capacity while it satisfies sensory performances.

This natural, clean label solution is supported by a new study suggests that the current phosphate replacements may have limitations and may not be as effective in preserving the flavour, texture, and appearance of processed meats.

Phosphate is commonly used in processed meat products to enhance moisture retention and improve tenderness. However, research has suggested that consuming high levels of phosphate can lead to some health problems. In response to these concerns, food manufacturers have turned to alternative solutions.

However, there are still unmet needs in existing phosphate alternatives that make it not as effective in preserving the quality of processed meat products. The researchers found that while some of the alternatives could help to maintain moisture retention and tenderness, they were not as effective as phosphate in improving the overall texture, flavour, and appearance of the meat.

Compared to phosphate, TasteNrich Natural Phosphate Replacement Solution showed no loss in cooking yield and springiness improved even higher than phosphate in emulsion-type sausages, said an application scientist from CJ FNT, Furthermore, it masked the off-notes of meat fat and increased the umami notes.

CJ FNT said it can be applied to various meat applications.

According to CJ FNT, TasteNrich Natural Phosphate Replacement Solution will be showcased at the upcoming food technology exhibition IFT FIRST at the McCormick Place convention center in Chicago, Illinois from July 16th to July 19th, 2023.
