Ishida’s AI-driven production monitoring software, Sentinel 5.0, has secured the Innovative Processing System Award at the 2025 PPMA Total Show — recognising the most advanced developments in processing and packaging machinery.
Launched in November 2024, Sentinel 5.0 enables food manufacturers to remotely monitor machine performance and production data in real time. The system consolidates performance information across an entire line — whether using Ishida or third-party equipment — to generate a live, data-led picture of operational efficiency.
A defining feature is its machine learning capability. Sentinel 5.0 analyses line behaviour, identifies where machines are underperforming, and notifies operators with precise diagnostics. These insights can reveal the causes of reduced capacity, pinpoint maintenance requirements, or suggest process optimisations without manual intervention.
Ian Hodgson, systems general manager at Ishida, said the software was developed “to respond directly to the needs of food manufacturers seeking smarter ways to manage, optimise, and safeguard their operations.”

Beyond live monitoring, Sentinel 5.0 introduces an AI-powered chatbot interface that allows operators to query system performance or diagnose machine issues. Drawing from machine manuals and an expanding machine-learning database, the chatbot can resolve common production problems remotely — reducing the need for on-site engineering support.
Built on Industry 5.0 principles, the platform promotes human–machine collaboration rather than automation in isolation. “The intention is to convert complex machine data into actionable insights that drive efficiency, compliance and productivity,” said Hodgson.
