Roquette’s pea protein reduces need for masking agents

Roquette unveils its next-generation pea protein innovation. Nutralys Pea 850F is set to redefine plant-based formulations, offering a cleaner taste profile without secondary additives, significantly streamlining R&D processes. This innovation meets the rising demand for high-protein, nutrient-dense products, crucial for the evolving GLP-1 companion food market.

Roquette has introduced Nutralys Pea 850F, a groundbreaking pea protein isolate engineered to eliminate the vegetal off-notes that have historically complicated plant-based formulations. This innovation represents a pivotal advancement for food scientists and product developers, addressing flavour challenges at the molecular level rather than relying on secondary additives. The result is a shorter ingredient list and expedited R&D timelines.

Traditionally, formulating with pea protein has required a delicate balance. While valued for its sustainability and nutritional benefits, its earthy profile often necessitated complex flavouring systems or masking agents to ensure palatability. Nutralys Pea 850F changes this dynamic by offering a neutral sensory profile, confirmed by expert panels to have a smoother, cleaner taste that demands minimal flavour intervention. This improvement allows manufacturers to maintain clean label integrity, listing “pea protein” without the need for chemical masking aids. Furthermore, the isolate retains high emulsion capacity and solubility, matching Roquette’s industry-standard S85F, and ensuring stability in liquid and gel formats.

Adeline Morcet, an application scientist at Roquette, stated, “From a formulation standpoint, reducing off-notes at source makes an immediate difference. It allows producers to focus on texture and nutrition rather than compensating for flavour challenges.”

The launch is timely, aligning with two significant market trends. Firstly, the rise of ready-to-drink and ready-to-mix beverages, where solubility and a grit-free mouthfeel are crucial. Secondly, Roquette is targeting the fast-growing GLP-1 companion food market. As consumer interest in weight-loss medications rises, there is increased demand for high-protein, nutrient-dense mini-meals. Notably, there has been a 29% growth in products featuring combined protein and weight management claims over the past year.

The Nutralys Pea 850F isolate is designed as a versatile solution across several high-growth categories, including dairy alternatives for cleaner-tasting milks and yogurts, specialised nutrition with high-protein powders for athletes and seniors, and hybrid products that enhance the sensory profile of blended meat and plant entries.

Benjamin Voiry, Global Protein Product Marketing at Roquette, remarked, “We have tackled the problem at the ingredient level, giving manufacturers the freedom to create products that consumers genuinely enjoy, with cleaner formulations.”
