New automatic stuffing machine for Iberian sausage
Inox Meccanica has added the brand new PIC LOMO to its range of products including machines for the automatic pressing, forming and stuffing of meat in meshes and casings, as well as a whole series of machines designed for industrial washing.
For automatic stuffing machines, the flagship is the PIC 99 BCE, short for automatic pressing, stuffing and clipping machine. The PIC99 has been designed to stuff whole muscles and, in particular, for the traditions of the Italian market such as coppe, pancette, bresaola, prosciutti, lonze and, in particular configurations, also for roasts.
The PIC LOMO is a machine specially designed for the Spanish market and more specifically for stuffing lomo, a typical sausage produced in large quantities with meat from the Iberian breed, or Duroc.
All Spanish producers use semi-automatic machines to fill lomo because this anatomical part is very delicate and if it is pressed more than it should be, cracks (rupture of the muscle tissue) in the longitudinal direction can occur, with the consequent risk of infiltrations during the curing process, which then reveal themselves as defects on the finished product.
In order to be able to fully automate this process to deal with the delicacy of the meat, Inox Meccanica has designed and patented a new machine that automatically performs the same actions that the operator currently performs with the help of traditional machines.
