Inox Meccanica automatic vacuum salting systems enhance quality of final product
Inox Meccanica is offering automatic vacuum salting systems to improve production efficiency, ensure uniform processing and optimise the quality of final products.
The company offers drums for products intended for curing such as ham, bresaola, bacon, speck, head of loin. The equipment is designed to ensure precise and uniform mixing, essential to obtain high-quality and uniform products during curing.
It also offers drums for products intended for cooking, ideal for processing ham, shoulder, bacon, head of loin. The machines are equipped with advanced technologies for homogeneous and controlled cooking, preserving flavour, aroma and nutritional values.
Inox Meccanica’s tumblers are characterised by their robustness, efficiency and ability to respond to the different needs of producers. Made entirely of stainless steel, they are equipped with a rotation and tilting system designed to ensure homogeneous and gentle treatment of the meat, minimising the risk of damage and improving product consistency.
The tumblers are available with load capacities of approximately 500, 1200, 3000, 4000 and 5000 kg, thus adapting to different production requirements. These machines are equipped with advanced technologies that allow precise control of operating parameters such as speed, massaging times and internal vacuum, offering the possibility of customising each step of the process.
The salting system designed by Inox Meccanica is patented and designed to automate and optimise the salting process, ensuring an even distribution of salt and ingredients.
Salting is a decisive step not only for flavour, but also for food safety. The Inox Meccanica system uses innovative technology to maintain high levels of hygiene that comply with international regulations.
Its strengths include:
- The hatch for osmotic extraction: guarantees maximum sealing of the barrel both under pressure and vacuum during the osmotic extraction phase.
- The inner paddle: thanks to its shape, it is able to distribute and mix the ingredients precisely and evenly while gently massaging the product.
- The glycol circulation cooling system: allows the product temperature to be kept under control.
- Load cells: allow you to check the exact quantity of product loaded.
- Temperature probe: monitors product temperature for optimal management.
- The System X multi-drum monitoring system: allows remote control of systems with multiple drums, loading new recipes and sending them directly to the PLC.
The use of top quality materials and the implementation of automatic washing systems facilitate the cleaning and maintenance of this equipment, reducing downtime and ensuring maximum productivity.
